Today in the Anchored to the East kitchen we are making up the ever so frequently instagram-ed and beautiful acai bowl, which is basically just a smoothie in a bowl, using acai. I’ve been doing the smoothie thing for a long time, a few years ago I even got Ben off of his boxed cereal and onto the smoothie-for-breakie train. I’ve seen lots of recipes for acai bowls and after chatting with a friend of mine at work, decided I wouldn’t even play around with the powdered acai and went straight to the frozen option.
Here is what I used to make my acai bowl, but if any of these fruits or toppings are not to your you liking you can easily substitute out for something that fancies your taste buds 🙂
1 package frozen acai (pictured below) – I just left it out of the freezer for a few minutes before adding to the blender
1 frozen banana
1/2 cup almond milk
1 tbsp. ground flax
3 tbsp. granola (pictured here is my mother-in-laws AMAZING granola, but you could use your fav homemade recipe or packaged option of your choice)
1 tbsp. coconut
small handful of fresh cherries, halted and pitted
Step 1: Blend together your acai, almond milk, flax and frozen fruit. Don’t over blend because you want a thicker consistency.Step 2: Pour your blended mixture into a bowl, preferably a clear one for instagram worthiness, and pile on the toppings of your choice!
Step 3: Grab a spoon and dig in! OH, don’t forget to instagram it before you dive in and make sure to tag or hashtag #anchoredtotheeast *wink*Hope you enjoyed this quick and healthy recipe, a great way to start your day or a fast and easy lunch for those on the go!
As a side note, acai has many health benefits including; improved digestion, increased energy, and strengthens the immune system.
