On Monday night we were feeling a little sad because our parents already left for their Newfoundland vacation, leaving us here in Ontario so we decided to cheer ourselves up with some lobster guac and watermelon margaritas!
The lobster guac is basically just your fav guacamole recipe topped with warmed lobster meat- to die for! Our fav guac recipe is from the Barefoot Contessa’s herself, Ina Garten so for fear of copyright infringement we won’t be posting that recipe here- but it’s basically avocado, lemon, red onion, garlic, hot sauce, tomato….fresh and delish! We purchased the lobster frozen from our local grocery store (claw and knuckle meat), thawed it, warmed it up in the microwave and presto! Lobster guac!
The watermelon margaritas were just what we needed on Monday’s hot summer night! We basically winged the recipe, so this we can share with you 🙂 I think the key was having very fresh, sweet watermelon to make it taste as delish as they were.
1/4 of a watermelon, cubed, skin disagreed
3-4 cups of ice
1/4 cup of sugar, plus extra for garnish
3 limes, juice of 2.5 and the other .5 for garnish
9 oz tequila
2 oz cointreau
Blend the watermelon, ice, sugar, lime juice, tequila and cointreau together until ice fully blended and sugar dissolved. Rim your cup with one of the lime wedges and dip in sugar. Pour up your watermelon/tequila mixture, add a slice of lime and ENJOY!
