Mom’s Prize Cherry Cake


The Christmas baking has officially begun at the Elliott household! Just like every year the first thing to make is Mom’s Cherry Cake. This is a long time recipe that has been in the family for years and is a Newfoundland classic. It is simple but delicious and is often our alternative to Fruit Cake- although Mom makes this one as well- it never seems to go as quickly as the Cherry Cake.

Enjoy as a dessert or with your morning cup of Joe- it’s the holidays, cake for breakfast is officially allowed!

Heat oven to 300 degrees Fahrenheit.

  • 4 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt


  • 1 1/2 cup margarine
  • 2 cups sugar
  • 1/2 tsp almond flavouring
  • 1/2 tsp vanilla
    • beat for 2 minutes
  • 5 eggs, blend in 1 at a time

Add dry ingredients to creamed ingredients with 1 can thick cream, and the juice and grated rind of 1 lemon.

  • 2 cups chopped, glazed cherries

Coat the cherries with 2 tbsp of flour and fold into cake mixture.

Bake 1 1/2 – 2 hours.
